本文以北京市西城区59家“中华老字号”企业为调查对象,从分类研究入手,采用问卷和走访调查,对经济全球化背景下影响餐饮、食品加工、茶业、医药、百货/商业零售、服务和文化休闲类等不同行业中华老字号企业发展的关键因素进行识别。结果表明,品牌维护和建设是当前影响餐饮和食品加工业中华老字号企业发展的关键因素;产品和文化创新是茶业中华老字号发展的关键;而生产和经营模式的创新是医药行业中华老字号发展的关键因素;对于商业零售业和服务文化休闲行业来讲,紧跟消费需求和经营服务理念的提升分别是发展的关键。
In this paper, 59 “old-time Chinese companies” in Xicheng District of Beijing were selected as research objects. Starting from the classification research, the questionnaire and interview were used to investigate the influence of catering, food processing, tea industry, medicine, department store and commerce Retail, service and cultural and leisure industries in different sectors of China’s old and famous enterprises to identify the key elements of identification. The results show that brand maintenance and construction are the key factors that affect the development of the old Chinese enterprises in the catering and food processing industry. Product and cultural innovation are the key to the development of the old tea industry in China. Innovation in production and management is the development of the old Chinese medicine industry The key factor; for the retail business and service culture and leisure industry, followed by consumer demand and business services to enhance the concept of the key to development, respectively.
