目的通过调查天津市某地区的建筑工地食堂卫生现状及食堂从业人员食品安全知识掌握情况,探索建筑工地食堂食品安全干预的方法并评价其效果。方法 2012年对该地区范围内所有建筑工地食堂食品安全状况进行基线调查,2013年对建筑工地食堂开展监督监测、食品安全知识健康教育等综合性干预措施,并对干预效果进行评价。结果干预前,该地区建筑工地食堂餐饮许可证持证率仅为3.28%,食品加工场所卫生合格率在10%~30%之间,从业人员食品安全知识平均得分3.03分。干预后,建筑工地食堂食品安全管理状况有了明显的提高。除了加工专间、配餐间设置以外,建筑工地食堂的软件管理情况、加工场所卫生设施、餐具消毒效果均有不同程度的改善和提高,食品安全知识平均得分6.3分。结论对建筑工地食堂采取监督监测、食品安全知识健康教育等综合性干预措施,对于提高建筑工地食堂食品安全水平是行之有效的。
Objective To investigate the hygienic status of canteens in a construction site in a certain area of Tianjin and the knowledge of food safety of canteens practitioners in order to explore the methods of food safety intervention in canteens of construction sites and evaluate their effects. Methods In 2012, a baseline survey was conducted on the food safety status of canteens in all construction sites in the area. In 2013, comprehensive interventions were conducted on supervision and monitoring of canteens in construction sites and health education on food safety, and the effect of intervention was evaluated. Results Before the intervention, the permit rate of catering permit for canteens in construction sites in the area was only 3.28%, the passing rate of hygiene in food processing places was between 10% and 30%, and the average score of knowledge of food safety for employees was 3.03. After the intervention, the construction site canteen food safety management situation has been significantly improved. In addition to the processing of specialized rooms, catering room set outside, the construction site canteen software management, processing facilities, sanitary facilities, tableware disinfection effects have improved to varying degrees and improve food safety knowledge average score of 6.3 points. Conclusion Comprehensive intervention measures such as supervision and monitoring of canteens in construction sites and knowledgeable health education of food safety are effective in improving the food safety level of canteens in construction sites.
