鱼类消化酶的研究是鱼类消化生理的重要研究内容,也为配合饲料的研制提供依据。红鳍东方鲀是我国重要的海水经济鱼类,因此对其消化酶的研究具有重要意义。众所周知,许多生物和非生物因子都会影响鱼类体内消化酶的水平,如日龄、温度、pH值、盐度等。pH是对酶起显著作用的因素,由于酶是蛋白质,当pH过高或过低都可能引起酶的变性。酶的活性在某一pH最大,而当离开该pH值酶活性会逐渐减弱,其图形如钟型。因此测定酶的最适pH可作为酶性质的一个指标。
Fish digestive enzymes research is an important study of fish digestive physiology, but also provide a basis for the development of compound feed. Redfin tuna is an important marine economic fish in China, so its digestive enzymes research is of great significance. It is well-known that many biological and abiotic factors affect the level of digestive enzymes in fish such as age, temperature, pH, salinity and the like. pH is a factor which plays a significant role in the enzyme. Since the enzyme is a protein, the enzyme may be caused to denature when the pH is too high or too low. Enzyme activity at a maximum pH, and when leaving the pH value of enzyme activity will gradually diminish, the pattern of bell-shaped. Therefore, determining the optimum pH of the enzyme can be used as an indicator of the nature of the enzyme.
