目的了解唐山市市售干制水产品甲醛含量。方法采集唐山市内四区(路北区、路南区、开平区和凤凰新区)的4大类水产品(鱼类、虾类、贝类和海产头足类软体动物)的干制品,共计101份样品。采用中国水产行业标准SC/T 3025—2006中规定的乙酰丙酮分光光度法测定甲醛含量;采用SPSS 13.0统计软件进行数据分析;本文暂以刘淑玲等[1]推荐的水产品甲醛限值(30 mg/kg)为标准计算不合格率。结果干制水产品中普遍存在甲醛,甲醛检出率为100%。甲醛含量范围在0.75~483.26 mg/kg之间。全部样品中超过30 mg/kg的有30份,占29.70%。甲醛含量最低与最高的样品分别为对虾干和海米。不同种类样品的甲醛不合格率差异有统计学意义,海产头足类软体动物干制品甲醛不合格率最高。结论唐山市市售干制水产品质量较好,但海米等个别样品不排除人为添加甲醛的可能。
Objective To understand the formaldehyde content of dried seafood in Tangshan City. Methods Dried products of 4 major aquatic products (fish, shrimp, shellfish and marine cephalopods) from four districts (Lubei District, Luonan District, Kaiping District and Fenghuang New District) in Tangshan City were collected, 101 samples. The content of formaldehyde was determined by acetylacetone spectrophotometry as stipulated in China Fisheries Standard SC / T 3025-2006. The data were analyzed by using SPSS 13.0 statistical software. The formaldehyde tolerance of aquatic products recommended by Liu Shuling [1] (30 mg / kg) as the standard calculation of failure rate. Results Formaldehyde was found in dried aquatic products with formaldehyde detection rate of 100%. Formaldehyde content in the range of 0.75 ~ 483.26 mg / kg. 30 samples of more than 30 mg / kg in all samples accounted for 29.70%. The lowest and highest formaldehyde content samples were dried shrimp and dried shrimp respectively. Different types of samples of formaldehyde failed rate was statistically significant, molluscan dried seafood head cephalopods formaldehyde highest failure rate. Conclusion The quality of dried aquatic products on the market in Tangshan City is good, but the individual samples such as dried rice can not rule out the possibility of artificial addition of formaldehyde.
