萝卜在贮藏中糠心是由于温度过高,呼吸作用强,养分水分消耗多;腐烂是由于萝卜带病贮藏或贮藏期间感染所致。贮藏的萝卜应皮厚、质脆、含糖及水分多,同时无病害,无损伤,不抽袭,不受冻为宜。(一)窑贮法窑贮萝卜应在霜降前,即外温降至一5℃以下、窑温在3~4℃时人窑为宜
