我国苹果总产量占世界苹果总产量的三分之一,但苹果的出口量只有世界贸易量的2.5%,其加工的比例与欧美一些国家相比,也非常低。近些年来,我国引进了几十条苹果浓缩汁生产线,90%以上的苹果浓缩汁产品出口,由于严重供大于求,销售价格暴跌。因此,研究开发浓缩苹果汁迫在眉睫。中国农大食品学院(010-62336876)有关的课题组历时6年,终于成功地研制出用浓缩苹果汁酿制苹果酒的技术。他们研制的苹果酒可以面向大众消费,尤其适合男女青年人饮用,是介于葡萄酒与啤酒之间的低度含气饮料酒,酒精度介于4.5-7.5之间,具有果汁味。在进行苹果加工的同时,我国每年都产生苹果渣100多万吨,如果加上其他水果的果渣,每年排出的果渣高达几百万吨,绝大部分被遗弃。中国农大食品学院的专家认
