净制龟板、鳖甲,传统用浸泡法,现代用蛋白酶法,酵母菌法。前二法对动物胶均有不同程度的损失,此三法均有不同程度的臭气。试改用草菇菌固体发酵法,以克服前有之弊端。草菇菌依靠自身的多种分解酶将培养基中的大分子有机物分解成小分子后,加以吸收利用。龟板、鳖甲上的鳞片、筋肉、筋膜,都是蛋白质类化合物,可做为草菇菌的营养来源,根据上述原理,利用草菇菌固体发酵法,对龟板、鳖甲进行净制。现将结果介绍如后,仅供参考。
Net turtle shell, armor, traditional soaking, modern protease, yeast. The first two methods have different degrees of damage to the animal glue. All three methods have odors in varying degrees. Try to use straw mushroom solid fermentation method to overcome the previous drawbacks. Mushroom mushroom mushrooms rely on their own various decomposing enzymes to decompose macromolecular organic matter in the medium into small molecules and absorb them. Turtle, scales, muscles, and fascia on the armor are all proteinaceous compounds and can be used as a nutrient source for straw mushroom. According to the above principle, the turtle plate and armor plate are net-worked using the method of solid fermentation of straw mushroom. The results are presented hereafter for reference only.
