目的了解宁夏回族自治区高等学校食堂从业人员食品安全知识、态度、行为状况及影响因素,为采取健康教育策略和措施提供依据。方法整群随机抽取宁夏境内15所高校食堂的753名从业人员,自行设计问卷对食品安全知识、态度、行为进行自填式问卷调查。结果食堂从业人员食品安全知识总知晓率为58.95%,平均得分为(7.06±2.04)分,及格率仅为61.75%。不同年龄、户籍、文化程度、从业年限、月平均收入和是否持有健康证的从业人员食品安全知识及格率差异均有统计学意义(P值均<0.05)。从业人员在贮存加工食物、食品添加剂使用、采购索票验证等方面的行为形成率均在90%以上。结论宁夏高校食堂从业人员食品安全知识存在一定欠缺,而食品安全态度积极、行为尚可。必须加强健康教育,普及食品安全知识。
Objective To understand food safety knowledge, attitude, behavior and influencing factors of staffs in canteens in higher schools in Ningxia Hui Autonomous Region, and to provide basis for taking health education strategies and measures. Methods A total of 753 practitioners from 15 colleges and universities canteens in Ningxia were randomly selected to conduct a self-designed questionnaire to conduct a self-administered questionnaire survey on food safety knowledge, attitude and behavior. Results The total awareness rate of food safety among canteens practitioners was 58.95%. The average score was 7.06 ± 2.04 and the pass rate was only 61.75%. There was significant difference in the passing rate of food safety knowledge among employees of different ages, household registration, educational level, years of employment, monthly average income and health certificates (P <0.05). Practitioners in the storage of processed foods, the use of food additives, purchase tickets verification and other aspects of the formation rate of more than 90%. Conclusion Ningxia University canteens practitioners food safety knowledge there is a certain lack of, and food safety attitude is positive, the behavior is acceptable. We must strengthen health education and popularize food safety knowledge.
