目的了解深圳市罗湖区消费环节中副溶血性弧菌污染状况,识别食物消费过程中副溶血性弧菌重点污染环节,为副溶血性弧菌食物中毒的防治提供科学依据。方法 2009—2010年间于罗湖区海鲜制售类餐馆、非海鲜制售类餐馆、市场三类场所中采集海产品、淡水产品、加工环节采样样品及冷菜四类样品,依据国标GB/T4789.7—2008检验样品副溶血性弧菌带染状况。结果从18家海鲜制售餐馆、8家非海鲜制售餐馆、5家水产市场、4家超市中,共采集样品458份,其中海水产品57份、淡水产品47份、加工环节样本174份、冷菜样品180份。水产品中,淡水产品副溶血性弧菌阳性率(43.75%,21/47)高于海水产品(1.75%,1/57)(P<0.01);加工环节类样本中,粗加工砧板以及淡水养殖水副溶血性弧菌检出率较高,分别为16.00%(4/25)、38.71%(12/31);冷菜中副溶血性弧菌检出率普遍较低,阳性率分别为熟肉1.43%(1/70)、凉菜1.54%(1/65)、生腌海产品0(0/45)(P>0.05)。结论深圳市罗湖区部分食品和加工环节样品中存在一定程度的副溶血性弧菌污染,尤其淡水产品副溶血性弧菌污染较为严重。建议在食品安全风险监测中应加入淡水产品的副溶血性弧菌污染监测。
Objective To understand the status of Vibrio parahaemolyticus (Vibrio parahaemolyticus) in the consumption process in Luohu District of Shenzhen City, and to identify the key pollution links of Vibrio parahaemolyticus during food consumption so as to provide a scientific basis for the prevention and control of Vibrio parahaemolyticus food poisoning. Methods From 2009 to 2010, four samples of seafood, freshwater products, processing samples and cold vegetables were collected from three types of seafood production and sales outlets, non-seafood restaurants and markets in Luohu District, according to GB / T4789. 7-2008 Test sample Vibrio parahaemolyticus with stained condition. Results A total of 458 samples were collected from 18 seafood restaurants, 8 non-seafood restaurants, 5 aquatic markets and 4 supermarkets, including 57 marine products, 47 freshwater products, 174 processing samples, 180 samples of cold vegetables. Among the aquatic products, the positive rate of Vibrio parahaemolyticus (43.75%, 21/47) in freshwater products was higher than that in seawater products (1.75%, 1/57) (P <0.01). Conclusion Some strains of Vibrio parahaemolyticus were found in some foodstuffs and processing samples in Luohu District of Shenzhen City. In particular, the contamination of freshwater products with Vibrio parahaemolyticus was more serious. It is suggested that freshwater aquatic Vibrio parahaemolyticus contamination monitoring should be added to the monitoring of food safety risks.
