目的了解锡山区大中型餐饮单位熟食制品微生物污染现况,及时发现和解决问题,确保食品安全,预防食源性疾病的发生。方法按随机采样的原则对锡山区2012年-2014年大中型餐饮单位熟食制品进行卫生监测。按照国家标准进行检验和评价,并对检测结果进行统计分析。结果锡山区2012年-2014年共检测样品889份,总合格率仅为48.59%,菌落总数合格率为75.70%,大肠菌群合格率为54.67%,致病菌合格率为98.20%。大型规模经营单位的合格率高于中型;量化分级A级餐饮单位的合格率明显高于非A级餐饮单位的合格率;第三季度的合格率明显低于其他季度;禽肉类的样品总合格率明显低于其他类别。结论锡山区餐饮单位熟食制品微生物污染较为严重,卫生质量较差,存在一定的安全隐患。为防止食源性疾病的发生,保障人民群众身体健康,加强卫生监督管理制度已刻不容缓。
Objective To understand the status of microbiological contamination of cooked food products in large and medium-sized catering units in Xishan District, discover and solve problems in time, ensure food safety and prevent food-borne diseases. Methods According to the principle of random sampling, Xishuang District, 2012-2014 large and medium-sized catering units cooked food hygiene monitoring. The total pass rate of colonies was 75.70%, the pass rate of coliform bacteria was 54.67% and the pass rate of pathogenic bacteria was 98.20%. The pass rate of large scale business units is higher than that of medium sized ones; the pass rate of A-level restaurant with quantitative grade is obviously higher than the pass rate of non-A-level catering units; the passing rate in Q3 is obviously lower than other quarters; The passing rate is obviously lower than other categories. Conclusion The microbial contamination of cooked food products in catering units of Xishan District is more serious, the quality of hygiene is poor, and there are some potential safety problems. In order to prevent the occurrence of food-borne diseases, safeguard the health of the people and strengthen the system of supervision and administration of health, it is imperative to urgently urgently need it.
