一、气调贮藏技术的发展和在水果、蔬菜保鲜方面应用概况水果和蔬菜是季节性很强而又鲜嫩容易变质的食品,人们为了使其长年保鲜供其食用,曾经摸索过许多贮藏方法。例如很早以前我国民间就把水果装入缸内埋入土中贮藏,国外也有把桶装苹果埋入地下贮存的作法等,都收到了一定的保鲜效果,但不能确有把握地获得成功,因为这仅是停留在经验上的一些作法,并没有掌握其保鲜延长贮藏时间的原理,也就不可能采取技术手段更有效地控制保鲜贮藏期。
