目的 了解广东省潮汕地区城乡居民食物消费结构现状。方法 对潮汕地区城乡 80 2户居民进行食物消费结构的问卷调查。并以 3d称重法为基础 ,2 4h回忆法为补充 ,对部分家庭进行随机抽样调查。结果 随着居民收入的增加 ,营养型食品消费需求在增加 ,谷类 ,肉类等主食性食品的消费支出在下降 ,居民主食性食品消费需求仍占有较大比重 ;谷类等植物性食物仍是膳食主体 ,优质蛋白质的摄入明显改善 ,但肉类占有的比例偏高 ,奶类较低。热能基本满足要求。结论 潮汕地区城乡居民食品消费结构升级潜力较大 ;膳食结构模式仍属于动、植物食物比例适当型 ,但自身在量和内部构成方面尚不科学 ,已出现高蛋白、高脂肪的发展趋势。
Objective To understand the status quo of food consumption structure of urban and rural residents in Chaoshan area of Guangdong Province. Methods A questionnaire survey on food consumption structure of 802 households in urban and rural areas of Chaoshan area was conducted. And based on the 3d weighing method, 2 4 h memory method as a supplement, some families were randomly sampled. Results With the increase of residents ’income, the consumption demand of nutritious foods is increasing while the consumption expenditures of staple foods such as grains and meat are declining, and the consumption demand of residents’ staple food still occupies a large proportion. The plant foods such as cereals and so on are still the meals The main body, the intake of high-quality protein significantly improved, but the higher the proportion of meat, dairy, lower. Heat basically meet the requirements. Conclusion The food consumption structure of urban and rural residents in Chaozhou-Shantou Prefecture has a great potential to upgrade food consumption structure. The dietary pattern still belongs to the appropriate proportion of animal and plant food, but it is unscientific in terms of quantity and internal composition. The development trend of high protein and fat has emerged.
