黄瓜在我国已有2000多年的栽培历史,是我国人民喜食蔬菜之一,它以嫩瓜供人们食用.由于消费习惯和具体用途不同,各地对黄瓜的色泽、品质、瓜形和食用成熟度等方面有着不同的选择.当前我国黄瓜主要用于炒食、配莱做汤或做凉菜,也有用于鲜食代替水果,另有部分用于加工,主要以酱菜佐餐,其中部分用于粗加工(咸黄瓜)出口.随着人民生活方式的改变和对外贸易的发展,酸渍黄瓜的生产,将会得到应有的发展.
