采用干灰化前处理-微波消解-电感耦合等离子体发射光谱法,对油炸面食品、馒头、糕点、膨化食品、粉丝等5类食品中的铝含量进行检测。对测定方法进行系统研究,得到线性回归方程为y=767.5x-2.865,线性相关系数r=1,检出限1.70mg/kg,检测精密度小于1.2%,回收率在93%—100%。利用该方法对泉州市售食品中铝含量进行检测,发现油炸食品整体合格率69.23%,馒头的整体合格率为78.26%,糕点的合格率为80.95%,膨化食品的整体合格率为97.74%,粉丝的合格率100%。
The content of aluminum in five kinds of foods such as fried noodles, steamed bread, cakes, puffed food and vermicelli was detected by dry ashing pretreatment - microwave digestion - inductively coupled plasma atomic emission spectrometry. The linear regression equation was y = 767.5x-2.865, the linear correlation coefficient was r = 1, the detection limit was 1.70mg / kg. The detection precision was less than 1.2% and the recovery was between 93% and 100%. Using this method to detect the content of aluminum in the food sold in Quanzhou, we found that the overall pass rate of fried food was 69.23%, the overall pass rate of steamed bread was 78.26%, the pass rate of pastry was 80.95%, the overall pass rate of puffed food was 97.74% , Fans pass rate of 100%.
