《饮膳正要》初刊于公元133O年。作者忽思慧为元代蒙古族医学家,兼通蒙汉医学。元仁宗延年间(公元1314~133O年),任宫廷饮膳太医,主管宫廷饮食和药物补益。本书以大量篇幅叙论诸饮食莱点、主副食及点心的配膳和烹制方法,并据此说明其食疗作用。即以“膳”为主,以药(疗)为辅;重在饮食美味,寓治疗价值于饮膳之中,食之并无药味或药味不重,能被大多数人所接受。《饮膳正要》开创了一个药膳新时代。该书分为三卷,附有189幅插图,内容丰富,形式活泼、图文并茂,具有独到的见解和鲜明的民族特色,堪称我国第一部独具一格的营养学专著。英国剑桥大学的李约瑟博士称之为在中国饮食治疗和保健食品领域中的一部最重要的经典著作。通过此书,可以窥见元代宫廷饮膳之一斑,对于探讨元代医药史、营养卫生及烹稠技术、蒸馏酒早期医用等具有一定的价值。其中某些食疗方法,如山药粥、春盘面、芙蓉鸡、羊肚羹、牛奶烧姘等,王今仍在一些地区沿用,有着现实意义。所论“禽兽变异”,揭示了26种形象变异而列为不可食之禽兽,涉及生物遗传领域,可见该书的科学价值与应用价值不容低估。兹将本书的学术观点及主要特点论述于下。
