1.简易贮藏法用干燥、清洁的缸、罐、木箱或纸盒等为容器,以谷糠或松木锯屑、草木灰等作填充物,装一层填充物,摆一层鸡蛋,直到放满容器为止。贮藏的蛋要求新鲜、清洁、无破损、不受潮,每半个月或一个月翻动检查一次。此法适用于家庭少量鲜蛋的贮藏。2.冷藏法此法广泛应用于大规模贮藏鲜蛋。鸡蛋在冷藏之前,应先放在3~4℃的地方预冷2~3天,然后移至冷藏库冷藏,温度保持在0℃左右,范围±0.5℃,相对湿度80~87%。冷藏库内要保持清洁、通风,冷藏的蛋率先必须经过照检挑选,并应定时抽样照检。
