美国密执根(Michigan)州立大学研究者发现樱桃花青素能够抑制环氧酶(Cox-1和-2)从而具有抗炎、防治心血管系统的病症。据称,种植樱桃者很少得心血管系统疾病,皆因樱桃花青素具有比维生素E和C更好的抗氧化性,跟阿司匹林一样能够抑制Cox-1和Cox-2而降低前列腺素的水平,减轻关节炎和痛风引起的肌肉疼痛。花青素脱糖产物青色素只需阿司匹林剂量的十分之一就达到跟使用布洛芬一样的效果。还发现樱桃花青素和类黄酮能防止脂质氧化,并因减少芳香含氮杂环的生成而具有防癌的功能。据称它能够将牛肉馅饼里的8~9种含氮杂环降低90%。密执根州是美国
Researchers at the Michigan State University in the United States have found that cherry anthocyanins can inhibit cyclooxygenases (Cox-1 and -2) and thus have anti-inflammatory and cardiovascular diseases. It is reported that cherries grow few diseases of the cardiovascular system, because cherry anthocyanins have better antioxidant properties than vitamin E and C.
