通过营养成分的测定和大鼠生长和代谢试验,对上海鱼品厂生产的马面魨鱼蛋白粉进行了营养评价。 测得五份马面鲀鱼蛋白粉的平均营养素含量分别为:蛋白质82.1%,脂肪0.04%,灰分11.38%,钙3.44%,磷2.18%,铁24.6mg%。这个鱼蛋白粉不但蛋白质含量高,而且氨基酸的模式平衡好。每百克粗蛋白中赖氨酸总量达9.4g,其中可利用赖氨酸为8.23g。合硫氨基酸4.5g,色氨酸为1.3g。每百克鱼蛋白粉中舍维生素B_2 1.27mg,尼克酸1.81mg。以此鱼蛋白粉喂养大鼠,测得蛋白质功效比值为2.97(校正值为2.53),净蛋白质比率(NPR)为4.29,真消化率(TD)为92.9%,生理价值(BV)为73.7%,净蛋白质利用率(NPU)为68.5%,与酪蛋白对照组相比,除真消化率较低外,其余各项指标均无显著差异。是一个很好的蛋白质补充品。
Nutritional assessment of the protein powder produced from the Shanghai Fish Factory was conducted by measuring the nutritional content and rat growth and metabolism tests. The average nutrient contents of the five protein samples were 82.1% for protein, 0.04% for fat, 11.38% for ash, 3.44% for calcium, 2.18% for phosphorus and 24.6 mg% for iron. This fish protein powder not only has a high protein content, but also a good balance of amino acids.
