大金星山楂采前一个月平均单果重增加很多,可食部分所占比例略有上升,糖酸含量增加较多,后期以果糖和柠檬酸占主要部分;淀粉前期积累,采收时有所降低,单宁含量虽略降趋势;乙烯发生量较少,发生量增加与果肉硬度下降同步发生。
