目的结合2010—2012年甘肃省14个地(市)随机抽取的粮食、薯类等主要食物中铝含量和国家居民营养与健康状况监测的食物摄入量相关数据,对农村不同年龄段人群主要食物中铝的暴露量进行研究。方法利用中国居民膳食营养与健康状况调查报告的已有数据,将食物分为米及米制品、面及面制品、其他谷类、豆制品、薯类以及淀粉等六大类,将整个人群按年龄、性别分为10组,与各组的食品摄入量的平均值、中位数以及第95百分位数时的铝摄入量进行分析。结果 2010—2012年甘肃省总体来看,粮食、薯类及其制品中,人群铝的暴露量在2~7岁年龄段存在一定的风险,尤其面及面和淀粉类制品中铝的均值含量较高,分别为153.31 mg/kg和112.62 mg/kg,农村男性2岁~和4岁~两个年龄段人群面及面制品铝的平均暴露量值分别为每天0.73 mg/kg·BW和0.80 mg/kg·BW;农村女性2岁~和4岁~两个年龄段人群面及面制品铝的平均暴露量分别为每天0.78 mg/kg·BW和0.83 mg/kg·BW。结论铝含量偏高食品存在一定安全风险,尤其在2~7岁年龄段,建议铝的摄入采取适当的风险预警措施,提醒消费者谨慎食用铝含量偏高食品。
Objective Based on the data of aluminum content in foodstuffs, tubers and other foods randomly selected from 14 places in Gansu Province from 2010 to 2012 and the food intake monitored by the nutrition and health conditions of residents in China, Aluminum exposure in food was studied. Conclusions There is a certain safety risk for foods with high aluminum content. Especially in the age range of 2 to 7 years, it is recommended that aluminum intake take appropriate risk precautionary measures to remind consumers to consume cautiously foods with high aluminum content.
