用蔗糖酯涂膜处理香蕉,能抑制气体交换,降低呼吸作用,减慢糖化速度,同时能推迟及抑制炭疽病菌体的生长,因此能延长香蕉货架期。此外,涂膜能减少香蕉重量损失,用在运输或贮藏,可提高经济效益,但对维持果肉硬度没有明显作用,且果皮颜色及风味稍差。
Banana treatment with sucrose ester coating can inhibit gas exchange, reduce respiratory effects, slow down the rate of saccharification, and can delay and inhibit the growth of anthracnose bacteria, which can extend the banana shelf life. In addition, the film can reduce the weight loss of bananas used in transportation or storage, can improve economic efficiency, but no significant role in maintaining the hardness of the pulp, and the color and flavor of peel is slightly worse.
