茶叶中多酚类及其衍生物的含量有20~33%,其中儿茶素类含有12~24%,占多酚类总量的60~80%。它们对茶树的生长发育,新陈代谢和制茶品质关系非常密切,对人体也具有重要的生理活性,因而受到人们的广泛重视。茶叶中儿茶素生物合成是一个重要而.又未解决的问题,它不仅在茶树生理生化上有重要意义,在提高茶叶产量和质量上也有重要作用,甚至在整个生物化学领域里,芳香环核的生物合成也是有重要意义
