目的:了解当前餐具消毒质量的现状,为加强餐饮行业的卫生监督管理提供科学依据。方法:依据《食(饮)具消毒卫生标准》GB14934-94,采用快速纸片法测定餐具的大肠菌群。结果:餐具检测总合格率为72.21%,合格率比以前年度有了较大幅度的提高。餐具集中消毒单位合格率高于其它餐饮单位,大(中)型单位和机关、学校、企业食堂要好于小型餐饮单位。低温时期合格率高于高温时期。结论:卫生监督部门必须加强对餐饮单位的卫生监督管理,提高餐具消毒质量,保障饮食卫生的安全。
Objective: To understand the current status of tableware disinfection quality, to provide scientific basis for strengthening the health supervision and management of catering industry. Methods: According to “food (drinking) with disinfection health standards” GB14934-94, using fast disc method to determine the tableware coliform bacteria. Results: The total pass rate of tableware testing was 72.21%, the passing rate had a more substantial increase than previous years. Tableware disinfection units concentrated rate higher than other catering units, large (medium) units and agencies, schools, corporate canteens better than small catering units. Low temperature qualified rate is higher than high temperature period. Conclusion: Health supervision departments must strengthen the health supervision and management of catering units, improve the quality of tableware disinfection, to ensure the safety of food hygiene.
