荷包扁豆是江苏省南通县兴仁地区的农家传统品种,与普通扁豆不同处:藤本木质程度较高,叶基部钝圆呈长三角形。叶面叶脉隐现,荚形较大,长10厘米左右,荚不可食,扁豆粒大、椭圆呈荷包形,豆粒表面精致的赭色花纹为其主要特征,豆粒淀粉质较高。口味甚佳,与肉类煮食或素炒均可。
