本文对以射频和微波频率加工食品原料用的测温方法进行了论述。讨论了所需要的食品工程研究的若干问题,以及选择温度监测系统的一些重要因素。
In this paper, temperature measurement methods for processing food raw materials with RF and microwave frequencies are discussed. Several issues involved in food engineering research are discussed, along with some important factors in choosing a temperature monitoring system.
