目的了解吉林市非发酵豆制品的卫生质量状况,为相关部门的监督管理提供依据。方法在1 0家超市和农贸市场对豆腐、干豆腐、腐竹和豆浆进行采样,每种产品各采样1 0份,检测其菌落总数、大肠菌群、金黄色葡萄球菌、沙门菌、志贺菌和苯甲酸、山梨酸、糖精钠,以及总铅和总砷。结果抽样产品的总合格率仅为2 7.5%,导致不合格的主要原因是违规使用苯甲酸、山梨酸和糖精钠。结论吉林市非发酵豆制品总体卫生质量状况较差,有关部门应对违规使用食品添加剂的问题加强监督管理。
Objective To understand the health quality status of non-fermented soybean products in Jilin City and provide the basis for the supervision and management of related departments. Methods Tofu, dried tofu, yuba and soybean milk were sampled from 10 supermarkets and farmers’ markets. Each product was sampled 10 samples. The total number of colonies, coliforms, Staphylococcus aureus, Salmonella, Shigella And benzoic acid, sorbic acid, sodium saccharin, and total lead and total arsenic. Results The total qualified rate of sampling products was only 2 7.5%. The main reason of the unqualified products was the illegal use of benzoic acid, sorbic acid and sodium saccharin. Conclusion The overall hygienic quality of non-fermented soybean products in Jilin City is poor. Relevant departments should strengthen the supervision and management of the non-use of food additives.
