目的研究宁波市市场销售的鲜活海产品中河豚毒素(TTX)含量及变化规律,并进行风险评估。方法选取宁波市6个区28个菜市场和超市为监测点,每月抽取100~120份市民消费量大的鲜活海产品,测定不同种类海产品中TTX含量、季节变化和区域特征。结果共抽取宁波市售鲜活海产品共计5大类1 055份,TTX阳性率为20.19%,浓度最高的为275.00μg/kg,平均含量为10.46μg/kg,但P25、P50和P75均低于检出限;检出TTX的213份海产品中TTX平均含量为51.81μg/kg,P25为25.25μg/kg,P50为36.25μg/kg,P75为63.20μg/kg;TTX阳性率、含量均存在季节、种类差异,但销售区域差异不明显;贝类TTX中毒风险最高,尤其是在第1和第4季度。结论宁波市售鲜活海产品含TTX的比例较高,但TTX含量较低,低于安全限值;但仍存在一定的食品安全风险。
Objective To study the content and variation of TTX in the fresh seafood marketed in Ningbo and carry out risk assessment. Methods Twenty-eight vegetable markets and supermarkets in six districts of Ningbo were selected as monitoring points. 100-120 fresh seafood products with high consumer consumption were selected monthly to measure the content of TTX, seasonal variation and regional characteristics in different kinds of seafood. Results A total of 1 055 freshwater products were collected from Ningbo City.
