目的调查一起由西式糕点引起的食物中毒事件,对分离出的沙门菌进行毒力基因检测和分子分型分析,为溯源提供依据,也为今后处理此类事件提供借鉴。方法采集患者粪便标本和剩余食物标本,分离致病菌并对病原菌分离鉴定,用脉冲场凝胶电泳(PFGE)对所分离的5株肠炎沙门菌菌株进行同源性分析,并用PCR方法对其毒力基因inv A、ipa B和sef A进行检测。结果 2份剩余的肉松面包和3份患者粪便标本均检出肠炎沙门菌,血清型为9,12:g,m:-。5株肠炎沙门菌PFGE图谱完全相同,同源性为100%。inv A、ipa B和sef A 3种毒力基因均被检出。结论结合本次流行病学调查资料、菌株分离鉴定结果和PFGE检测结果,证实本次食物中毒是由肠炎沙门菌污染肉松面包引起,且菌株均携带多种毒力基因。
Objective To investigate a food poisoning incident caused by western-style cakes, and to detect virulence genes and molecular typing analysis of isolated Salmonella to provide a basis for traceability and to provide reference for future treatment of such incidents. Methods Stool specimens and remaining food samples were collected, pathogenic bacteria were isolated and identified. Pathogenic gel electrophoresis (PFGE) was used to analyze the homology of the five isolates of Salmonella enteritidis isolated by PCR. The virulence genes inv A, ipa B and sef A were tested. Results Salmonella enteritidis was detected in 2 portions of the remaining floured bread and in 3 stool specimens of patients with serotypes of 9,12: g and m: -. The 5 isolates of Salmonella enteritidis PFGE identical, homology was 100%. Three virulence genes, inv A, ipa B and sef A, were detected. Conclusion Combined with the epidemiological survey data, the strain isolation and identification results and PFGE test results confirm that this food poisoning is caused by Salmonella enteritidis contaminated floss bread, and the strains are carrying a variety of virulence genes.
