据报道,对致癌性有抑制作用的有如下几种物质:维生素A、维生素E及巯基化合物等抗氧化剂;蛋白酶阻断剂;硒、钙等离子;固醇;食物纤维等。本文仅就第二届抗癌、抗致突变国际会议上的几篇有关报告作一简单介绍。 (1)Yagi报告了有关植物性酚类化合物鞣花酸及其有关化合物的研究成果。鞣花酸在葡萄、坚果及草莓果酱中大量存在。已发现鞣花酸能阻断二醇环氧化物的致突变性。二醇环氧化物是致癌物苯并(a)芘的终端活性物质。鞣花酸与二醇环氧化物发生反应使环裂
