目的了解太原市2010年食品中食源性致病菌的流行情况及食品中食品添加剂及金属元素的超标情况。方法选择当地居民的主要购买点进行随机采样,共采集8类540份食品样品,进行食源性致病菌监测;共采集230份食品样品,进行金属元素和食品添加剂监测。按照国家标准方法进行致病菌、金属元素、食品添加剂的检测。结果食品中致病菌污染率为10.37%,金属元素和食品添加剂超标率为9.09%。不同包装、不同零售点食品中致病菌污染率差异有统计学意义;不同零售点金属元素和食品添加剂超标率差异有统计学意义。结论太原市食品中致病菌污染率和金属元素及食品添加剂超标率均较高,尤其是散装食品和集贸市场上流通的食品,须进一步加强监管。
Objective To understand the prevalence of food-borne pathogenic bacteria in food in Taiyuan in 2010 and the food additives and metal elements in the food exceeded the standard. Methods The main purchasing points of local residents were randomly sampled. A total of 540 food samples of 8 types were collected to monitor foodborne pathogens. Results The contamination rate of pathogens in food was 10.37%, while that of metal elements and food additives was 9.09%. There were significant differences in the contamination rates of pathogens in different packaging and different retail outlets. There was significant difference in the exceeding standard rate of metal elements and food additives in different retail outlets. Conclusion The contamination rate of pathogenic bacteria in food and the excessive content of metal elements and food additives in Taiyuan City are high, especially in the bulk food and foodstuffs flowing through the market, the supervision should be further strengthened.
