目的了解天津开发区餐饮业餐具消毒质量,为进一步采取有效管理措施提供依据。方法 2008-2011年采用大肠菌群快速检验纸片法对区内不同类别餐饮业的消毒后餐具进行了消毒效果监测评价。结果 4年间检测各类餐饮具2 372件,总合格率为81.28%,其中2011年最高(84.67%),2009年最低(78.91%)。酒店、餐馆、各类院校及企业食堂4类不同的餐饮单位中,酒店和企业食堂餐具消毒合格率较高,分别为90.84%和88.37%;餐馆和各类院校餐具消毒的合格率较低,分别为73.55%和72.41%。结论应加强各类院校和中小餐馆的餐具消毒监督管理措施,尤其应加大对餐具消毒效果的检测力度。
Objective To understand the quality of tableware disinfection in the catering industry in TEDA and provide the basis for further effective management measures. Methods 2008 - 2011 using coliform rapid test paper method of different types of catering industry in the region after disinfection tableware disinfection monitoring results were evaluated. Results A total of 2 372 tableware were tested during the four years, with a total pass rate of 81.28%. Among them, the highest was in 2011 (84.67%) and the lowest in 2009 (78.91%). Hotels, restaurants, various types of institutions and corporate canteens 4 different catering units, hotels and corporate canteens tableware disinfection pass rate was 90.84% and 88.37%; restaurants and various types of institutions tableware disinfection pass rate Low, respectively 73.55% and 72.41%. Conclusion The supervision and management measures of tableware disinfection should be strengthened in all kinds of institutions and small and medium restaurants. In particular, efforts should be made to detect the disinfection effect of tableware.
