目的:了解十堰市2000~2006年食源性致病菌污染及分布状况。方法:用增菌、培养、分离、血清学、API生化学对病原菌进行鉴定。结果:平均检出率为11.87%,乳制品和冷饮均未检出致病菌,其次是熟肉制品检出率最低,为2.35%,猪肉制品检出率最高,为22.22%;2002年检出率最低,为3.26%,2004年检出率最高,为20.00%;市乳品公司生产的45份样品均未检出病原菌,其次是餐饮业检出率最低,为7.69%,农贸市场检出率最高,为15.31%;7年共检出病原菌64株,沙门菌检出率最高,5.75%,空肠弯曲菌均未检出,其次是肠出血性大肠杆菌(O157)为2.04%;检出菌构成比沙门菌占48.43%,单核细胞增生李斯特菌占26.56%,肠出血性大肠杆菌(O157)占17.19%,副溶血性弧菌占7.81%,空肠弯曲菌0.00%。结论:我市食品中不同程度受到沙门菌、单核细胞增生李斯特菌、肠出血性大肠杆菌(O157)、副溶血性弧菌的污染,O157为我市新发病原菌,尤以生畜禽肉、蔬菜沙拉、非发酵豆制品污染严重。
Objective: To understand the pollution and distribution of foodborne pathogens in Shiyan City from 2000 to 2006. Methods: The pathogenic bacteria were identified by enrichment, culture, isolation, serology and API biochemistry. Results: The average detection rate was 11.87%. No pathogens were detected in dairy products and cold drinks, followed by cooked meat products with the lowest detection rate of 2.35% and pork products with the highest detection rate of 22.22%. In 2002 The lowest rate was 3.26%, with the highest detection rate of 20.00% in 2004. No pathogen was detected in 45 samples produced by Dairy Co., Ltd., followed by the lowest detection rate of 7.69% in the catering industry. The farmers’ market was detected The highest rate was 15.31%; 64 pathogens were detected in 7 years, the highest detection rate of Salmonella, 5.75%, Campylobacter jejuni were not detected, followed by intestinal hemorrhagic Escherichia coli (O157) was 2.04%; detected Staphylococcus aureus accounts for 48.43%, Listeria monocytogenes 26.56%, enterohemorrhagic Escherichia coli (O157) 17.19%, Vibrio parahaemolyticus 7.81%, Campylobacter jejuni 0.00%. Conclusion: The food in our city is polluted by Salmonella, Listeria monocytogenes, Enterohemorrhagic Escherichia coli (O157) and Vibrio parahaemolyticus to varying degrees in our city. O157 is the new pathogens in our city, Meat, vegetable salad, non-fermented soy products, serious pollution.
