目的了解县级城镇餐饮业餐具消毒效果现状,探讨基层餐饮业消毒卫生管理,提高食源性疾病防控能力。方法通过回顾性资料调查方法,对该县城镇各类餐饮经营场所、学校食堂及餐饮具消毒站的餐饮具卫生消毒质量进行了监测与分析。结果在2008-2010年共检测餐饮具5 209件,检出大肠菌群超标率为10.04%。餐饮单位规模越小,消毒质量越差,小型餐饮单位的餐饮具大肠菌群超标率达到17.43%。结论县级城镇餐饮业餐具消毒效果现状不容乐观,特别规模较小的餐饮单位需要重点加强餐饮具消毒管理和监督监测,以提高餐饮具卫生消毒水平。
Objective To understand the status quo of tableware disinfection in catering industry at county level and to explore the disinfection and hygienic management of grassroots catering industry and to improve the ability of prevention and control of foodborne diseases. Methods By means of retrospective data survey, the health and disinfection quality of tableware in all kinds of catering establishments, school canteens and tableware sterilization stations in the county was monitored and analyzed. Results A total of 5 209 tableware were tested during 2008-2010. The rate of over-standard coliform bacteria was 10.04%. The smaller the size of catering units, the poorer the quality of disinfection, small catering units catering Escherichia coli exceeded the rate of 17.43%. Conclusion The current situation of tableware disinfection in catering industry in county-level cities is not optimistic. Special small-scale catering units need to strengthen disinfection management and supervision of tableware in order to improve the level of hygiene and disinfection of tableware.
