目的:掌握陕西省市售熟肉制品中食源性致病菌污染状况,为陕西食品安全现状分析和管理提供准确信息。方法:2002年~2008年按照国家食源性疾病监测网监测要求和方法,对陕西省监测点内的农贸市场、超市、饭店销售的熟肉制品中沙门菌、单增李斯特菌、O157:H7/NM出血性大肠杆菌开展主动监测。结果:采集样品522件,检出目标致病菌86株,检出率16.3%。3种致病菌都有检出,主要以单增李斯特菌检出率最高,其次是沙门菌。结论:陕西省市售熟肉制品中存在有食源性致病菌污染,主要是单增李斯特菌和沙门菌污染严重,应加强食品安全卫生监督管理。
Objective: To know the status of food-borne pathogens in the market of cooked meat products in Shaanxi Province and provide accurate information for the status quo analysis and management of food safety in Shaanxi Province. Methods: From 2002 to 2008, according to the monitoring requirements and methods of the National Foodborne Disease Surveillance Network, the detection of Salmonella, Listeria monocytogenes, O157: Listeria monocytogenes in cooked meat products sold in farmer’s markets, supermarkets and restaurants in Shaanxi Province, H7 / NM hemorrhagic Escherichia coli to carry out active monitoring. Results: 522 samples were collected and 86 pathogenic bacteria were detected, the detection rate was 16.3%. Three kinds of pathogens have been detected, mainly in the highest detection rate of Listeria monocytogenes, followed by Salmonella. Conclusion: There are food-borne pathogenic bacteria in the cooked meat products on the market in Shaanxi Province, mainly due to the serious pollution of Listeria monocytogenes and Salmonella, and the supervision and management of food safety and hygiene should be strengthened.
