建立了一步提取测定大豆中脂肪酸的检测方法。金属钠与甲醇反应得到的甲醇-钠试剂,使试样中的脂肪和游离脂肪酸甲酯化,用正己烷提取后,氢火焰离子化检测器检测,保留时间定性,面积归一化法测定脂肪酸相对百分含量。该方法测定脂肪酸取样量少,操作方便、快速,百分含量相对标准偏差RSD<0.68%~2.68%,可满足大豆中脂肪酸测定的要求。
