千张原产安徽芜湖,有着悠久的历史,在清朝时曾作为进贡的礼品。芜湖千张在上海、浙江一带称为百页。经加工复制,可制出素肠、五香豆腐丝、臭千张等。一般1公斤大豆可出千张1公斤。其生产工艺流程为:包布处理→制熟浆→点浆与墩脑→打脑→浇制→压榨→剥离→烘干→产品鉴定。现介绍具体操作:1.包布处理:将用碱水煮过的长条包布用清水透净,再用竹棍将包布均匀卷在一起备用。2.制熟浆:按做豆腐的相同方法煮熟后,加入1/4的水,以降低浓度,防止凝固剂急速凝固。3.点浆与墩脑:制千张的凝固剂为盐卤,点浆温度85—90℃。方法同制豆腐,墩脑时间为6—11分钟。
