目的了解许昌市熟肉制品中亚硝酸盐的含量。方法按照《河南省食品安全风险监测实施方案》的要求,对2014—2015年采集的225份熟肉制品进行亚硝酸盐含量分析。结果亚硝酸盐检出率为79.1%,超标率为13.1%,最大值为400.0 mg/kg。其中散装样品和定型包装样品超标率分别为16.8%、3.4%,2者超标率差异有统计学意义(P<0.010)。结论亚硝酸盐在许昌市熟肉加工中使用普遍,在农贸市场中销售的散装熟肉制品中亚硝酸盐含量超标率较高。超市中销售的定型包装、散装熟肉制品亚硝酸盐含量基本在国家允许使用限值的范围之内,超标的极少。
Objective To understand the content of nitrite in cooked meat products in Xuchang. Methods According to the requirements of “Implementation Plan of Food Safety Risk Monitoring in Henan Province”, 225 samples of cooked meat products collected in 2014-2015 were analyzed for nitrite content. Results The detection rate of nitrite was 79.1%, the over standard rate was 13.1% and the maximum was 400.0 mg / kg. Among them, the over-standard rates of bulk samples and stereotypical packaging samples were 16.8% and 3.4%, respectively. The difference between the two standards exceeded the standard (P <0.010). Conclusion Nitrite is commonly used in cooked meat processing in Xuchang City. The content of nitrite in bulk cooked meat products sold in the farmer’s market is higher than the standard. Sales in the supermarket stereotypes packaging, bulk cooked meat products nitrite content within the limits of the national allowable use within the limits of very few.
