笔者在8年前即开始用冰冻、真空、红外线辐射、臭氧发生装置、盐渍、糖蜜、脱水、化学制剂和生物制剂等手段,对平菇等菌类进行保鲜试验,均未达到理想的效果。经过几十次的实验表明,最有效果的保鲜方法是用亚硫酸钠溶液,稀释成不同浓度,按季节的不同温度、温差、环境、光照和平菇品种进行分批实验,取得了一定的效果,现初报如下:
