利用不同方法对蝮蛇进行加工,分别得到蛇汤、蛇粉和蛇多肽,研究这3种物质的体外抗氧化活性。采用化学发光体系,通过测定蛇汤、蛇粉和蛇多肽清除·OH,O_2~-·,H_2O_2的IC_(50),比较不同分子量海参多肽的抗氧化性,以VC作阳性对照。结果表明,上述3种物质对·OH的清除能力均强于VC,对H_2O_2,O_2~-·的清除能力弱于VC,O_2~-·,H_2O_2的清除能力由强到弱的顺序为蛇多肽>蛇汤>蛇粉,对·OH的清除能力由强到弱的顺序为蛇多肽>蛇粉>蛇汤,说明与蛇汤和蛇粉比较,蛇多肽对3种活性氧有较好的清除效果。3种物质清除自由基的能力在一定范围内与其浓度呈线性相关。
Different methods were used to process viper snakes, snake soup, snake meal and snake peptides were obtained respectively and the in vitro antioxidant activity of these three substances was studied. The chemiluminescence system was used to determine the IC50 of OH, O_2 ~ -, H_2O_2 from snake soup, snake venom and snake peptides to compare the antioxidant activity of different molecular weight sea cucumber peptides. VC was used as a positive control. The results showed that the scavenging ability of these three substances to · OH was stronger than that of VC, the scavenging ability of H_2O_2 and O_2 ~ - · was weaker than that of VC, and the scavenging ability of O_2 ~ - · H_2O_2 was snake polypeptide > Snake soup> snake meal, the scavenging ability of · OH from strong to weak order is snake polypeptide> snake meal> snake soup, indicating that compared with the snake soup and snake meal, snake polypeptide on the three kinds of reactive oxygen species have better clearance effect. The ability of three substances to scavenge free radicals was linearly correlated with their concentrations within a certain range.
