目的对市售酱油、食醋中砷含量进行测定。方法按照GB/T5009.11-2003对市场上采集的75份食醋和23份酱油进行砷含量测定,并根据样品特点进行方法条件的改进。结果 98份样品阳性率41.8%,合格率100.00%。结论超市和城市的农贸市场卖售的酱油、食醋中砷含量均符合国标要求,但监管监测不能放松。
Objective To determine the arsenic content of commercially available soy sauce and vinegar. Methods According to GB / T5009.11-2003, 75 parts of vinegar and 23 parts of soy sauce collected on the market were measured for arsenic content, and the method conditions were improved according to the characteristics of the samples. Results The positive rate of 98 samples was 41.8% with a pass rate of 100.00%. Conclusion The contents of arsenic in soy sauce and vinegar sold in supermarkets and urban farmer’s markets all meet the requirements of national standard, but regulatory monitoring can not be relaxed.
