中华书局为适应目前广大工农生产技术和智织的需要,编著工农生产技术便览丛书,其中有关食品工业方面者十余种。江南大学食品工业系教育研究小组曾将雷云生先生所编之「科学酱油」与酱油的酿造」两册,加以讨论。首先我们必须重视,这一类丛书,既然是工农生产技术的指导;那末,内容就应该切合实际,使工农大众遵照他的方法,进行制造,能获得成功。因此,就必须具备几个条件,真如该书序言中说:「写这套书的人,多数是实际工作者,所讲的话一定要可靠。」也只有这样,才能使工农大众真正学

The research team of the Food Industry Department of Jiangnan University discussed two books, Science Soy Sauce and Soy Sauce, compiled by Mr. Lei Yunsheng. First of all, we must pay attention to this series of books, since it is the guideline for the production technology of workers and peasants. Then the content should be realistic and enable the workers and peasants to follow their methods and make them for success.
