杧果是一种重要的热带水果,由于杧果的营养和保健功能,近年来鲜切杧果的消费量逐渐增多。鲜切杧果容易褐变和软化,传统的热处理办法会减缓褐变过程,与此同时却会加速品质劣变。目前,脉冲光处理是研究得最多的一种杀菌消毒方法,是一种非热能处理方法,代替传统的热处理方法。在食品工业,脉冲光处理早已经开始用于物体表面、包装以及食物的杀菌处理,但目前还没有用于鲜切水果的相关报道。
Mangosteen is an important tropical fruit and the consumption of fresh cut mangos has been increasing in recent years due to its nutrition and health care functions. Fresh cut mango easily browning and softening, the traditional heat treatment will slow browning process, at the same time it will accelerate the deterioration of quality. At present, pulsed light treatment is one of the most studied disinfection and disinfection methods, is a non-thermal energy treatment method, instead of the traditional heat treatment method. In the food industry, pulsed light treatment has long been used to sterilize surfaces, packaging and food, but there are no reports of fresh-cut fruits.
