1 花粉蜂蜜酒制作 取1.25千克蜂蜜盛于坛中或其它适于保温的器皿中。将3.25千克的开水倒入坛内,边倒边搅,使蜂蜜化匀。然后进行冷却,待冷却到25℃左右时将研制成粉状的黄酒曲(市售,每0.25千克蜜用曲量50~100克),均匀地拌入蜜水中。一般情况下,24小时后即开始发酵,在发酵旺盛后期,添加蜜汁2%的花粉继续发酵。夏季经6~7天,冬季经30天的发酵,曲下沉,上部的澄清液即为花粉蜂蜜酒。
