目的了解富平县城区餐饮具消毒质量,以便加强饮食卫生管理。方法采用现场采样和细菌检验方法 ,对不同规模餐饮业的消毒质量进行了监测。结果截止2008年,该县城区餐饮店设有独立洗消间的单位只占20%;有专用消毒池的单位占71.67%;有消毒柜的单位占53.33%;有保洁柜的单位占77.5%。2006-2008年餐饮具消毒效果总平均合格率依次为78.39%、84.55%和87.93%;大中小型餐饮单位之间无明显差别。结论富平县城区餐饮单位消毒设施不完善,餐饮具消毒质量有待改进和提高。
Objective To understand the disinfection quality of Fuping County tableware in order to strengthen the management of diet hygiene. Methods The methods of on-site sampling and bacteria testing were used to monitor the quality of disinfection in different scale restaurants. Results By the end of 2008, only 20% of the units in the city’s catering establishments had independent decontamination units, 71.67% of which had special disinfection tanks, 53.33% of the units with sterilizing cabinets, 77.5% of the units with cleaning cabinets, . The overall average passing rate of tableware disinfection in 2006-2008 was 78.39%, 84.55% and 87.93% respectively. There was no significant difference between large, medium and small catering units. Conclusion Fuping County, urban catering units disinfection facilities imperfect, tableware disinfection quality needs to be improved and improved.
