目的了解预包装熟肉制品生产加工过程中单核细胞增生李斯特氏菌的污染状况,确定熟肉制品生产过程各个环节中该菌的分布情况和可能污染源。方法 2015年6月和9月各采样一次,采样在工厂各个车间进行,对操作人员、生产环境以及原辅料、中间产品、成品进行采样。依据国标方法检测单核细胞增生李斯特氏菌。结果在采集的119份样品中,单核细胞增生李斯特氏菌的检出率为21.85%,不同车间样品的检出率差异有统计学意义(χ~2=16.811,P<0.05),而不同种类样品的检出率差异无统计学意义(χ~2=0.112,P>0.05)。结论在灌肠食品的原辅料中单核细胞增生李斯特氏菌检出率高,生产过程中应注意消毒,防止发生食源性疾病。 Objective To understand the status of Listeria monocytogenes in the production and processing of pre-packaged cooked meat products and to determine the distribution of the bacteria and possible sources of contamination during the various stages of cooked meat products production. Methods Samples were taken in June and September of 2015. Sampling was conducted in all workshops in the factory to sample operators, production environments, raw materials, intermediates and finished products. Detection of Listeria monocytogenes according to national standard method. Results The detection rate of Listeria monocytogenes among the 119 samples collected was 21.85%. There was a significant difference in the detection rate of samples from different workshops (χ ~ 2 = 16.811, P <0.05) The detection rate of different types of samples was no significant difference (χ ~ 2 = 0.112, P> 0.05). Conclusions The detection rate of Listeria monocytogenes in the raw materials of the enema food is high, disinfection should be taken in the production process to prevent food-borne diseases.
