10年前,笔者等曾用回顾性方法对上海地区居民1950年至1985年35年间食物结构变化及其与健康和疾病的关系做过调查研究。结果表明,35年来,上海地区居民的膳食结构和营养结构发生了明显变化。变化特点是:粮食消费呈下降趋势,动物性食物消费成倍增长;碳水化合物摄入量呈下降趋势,脂肪摄入量不断增加。膳食结构和营养结构的变化,对居民的健康既有有益作用,也有不利影响;营养不良依然存在,“富裕型疾病”呈上升态势。如今上海居民的膳食营养状况如何,应当采取哪些改善措施,笔者根据
Ten years ago, I used retrospective methods to investigate the changes in food structure and their relationship with health and disease in Shanghai in the 35 years from 1950 to 1985. The results showed that in the past 35 years, the dietary structure and nutritional structure of residents in Shanghai have undergone significant changes. Changes are characterized by a downward trend in food consumption and double consumption of animal food. Carbohydrate intake shows a downward trend and fat intake continues to increase.
