目的掌握目前承德市食品安全现状,为卫生行政部门食品安全预警提供技术支撑。方法按照《食品化学污染物和有害因素监测工作手册》和《2014年食源性致病菌监测工作手册》,应用液相色谱仪、原子荧光和气相色谱等大型仪器检测相关指标。结果全年监测化学污染物及有害因素样品368份,超标32份,超标率8.69%;监测食源性致病菌样品329份,检出14株,超标率4.26%。结论承德市部分食品受到铅、总汞、农药、人工合成色素等化学污染物和食源性致病菌的污染,提示相关部门应提高认识,加强对食品生产、销售环节的监督检查,确保人民群众“舌尖上的安全”。
Objective To grasp the present situation of food safety in Chengde City and provide technical support for early warning of food safety in health administrative departments. Methods According to “Food Chemical Contaminants and Hazardous Factors Monitoring Manual” and “2014 Foodborne Pathogenic Bacteria Monitoring Manual”, using liquid chromatography, atomic fluorescence and gas chromatography and other large instruments to detect the relevant indicators. Results A total of 368 samples of chemical pollutants and harmful factors were monitored during the year, exceeding the standard of 32, exceeding the standard of 8.69%. 329 samples of food-borne pathogens were detected and 14 were detected, exceeding the standard of 4.26%. Conclusion Some foods in Chengde City were polluted by chemical pollutants such as lead, total mercury, pesticides, synthetic pigments and food-borne pathogens, suggesting that relevant departments should raise their awareness and strengthen the supervision and inspection of food production and sales to ensure that the masses of the people “Tongue on the safety ”.
