为了解改革开放30年食品理化检测方法的发展概况,介绍了参与国际间交流和互联网的普及对理化检验人员的影响,以及食品理化检验方法标准的更新和加强实验室管理的必要性。从样品前处理、仪器设备的角度探讨了理化检测方法的变化,分析了免疫和分子生物学技术在食品理化分析中的应用。虽然与发达国家相比我国的食品理化检测方面还存在一定的差距,但通过我国食品检测机构不断地调整和修正发展的方向,势必会赶上或达到国际同类先进水平。
In order to understand the development of food physical and chemical detection methods during the 30 years of reform and opening up, the paper introduced the influence of participation in international exchanges and the popularization of the Internet on physicochemical inspectors, as well as the updating of standards for physical and chemical test methods and the necessity of strengthening laboratory management. The changes of physical and chemical detection methods were discussed from the aspects of sample pretreatment, equipment and instruments, and the application of immune and molecular biology techniques in the food physical and chemical analysis was analyzed. Although there is still a certain gap in physical and chemical testing of food in our country compared with developed countries, it is bound to catch up with or reach the international advanced level of the same kind through the continuous adjustment and amendment of the direction of development by China’s food testing agencies.
