玉米是世界上重要的粮食作物,也是一种被广泛使用的高能量畜禽饲料,在国民经济中占有一定的位置。衡量玉米的营养价值,既要考虑蛋白质的含量,也要看其蛋白质的品质。而蛋白质的品质又取决于蛋白质所含氨基酸种类,以及所含必须氨基酸是否平衡,是否能被人畜吸收利用。普通玉米中含蛋白质10%左右,其中醇溶蛋白占59%,不能被利用;原因主要是缺少赖氨酸所引起的。赖氨酸是人体必须的氨基酸,而缺乏赖氨酸又是所有谷物的共性。
