目的对食品加工设备中与食品接触的铝及铝合金制品中锌、铅、镉、砷、铬、镍、锰7种元素的迁移规律进行研究。方法在流通领域进行抽样,设定不同浸泡条件,参照GB/T 5009.72—2003《铝制食具容器卫生标准的分析方法》进行分析。结果发现迁移条件对迁移量的影响与元素的类别有关,在相同条件下,元素不同其迁移量的变化也不同;锌、铬、镍、锰4种元素在高温的条件下较易发生迁移(尤其是锌),并且均表现出在高温环境中时间越长迁移量越高的趋势。结论不同元素受迁移条件的影响不同,在高温条件下较易发生迁移,建议不要将铝及铝合金制品长时间放置于高温环境中使用,以降低各元素发生迁移的风险。
OBJECTIVE To study the migration of seven elements of zinc, lead, cadmium, arsenic, chromium, nickel and manganese in aluminum and aluminum alloy products that are in contact with foodstuffs in food processing equipment. Methods Sampling was carried out in the field of circulation, and different immersion conditions were set. Refer to GB / T 5009.72-2003 “Analysis Method of Hygienic Standard for Aluminum Food Container” for analysis. The results show that the influence of migration conditions on migration is related to the types of elements. Under the same conditions, the migration of elements is also different. The migration of four elements of Zn, Cr, Ni and Mn is more likely to occur under high temperature Especially zinc), and each showed a tendency of higher migration amount in a higher temperature environment over time. CONCLUSION Different elements are affected by migration conditions and are more likely to migrate under high temperature. It is not recommended to use aluminum and aluminum alloy products in high temperature environment for a long time to reduce the risk of migration of each element.
